Create a nice surprise for Mother's Day by baking Mom a batch
of these berry muffins. Say "I Love You" by serving them to
her in bed along with her favorite coffee or tea.
MUFFINS:
1 1/2 cups flour
3/4 cup sugar
1/2 tsp salt
2 tsp baking powder
1/3 C vegetable oil
1 egg
1/3 C milk
1 C fresh or frozen (thawed and drained) mixed berries
MUFFIN CRUMB TOPPING
1/2 C brown sugar
1/3 C flour
1/4 C butter, cubed
2 tsp cinnamon
MUFFINS:
Preheat oven to 375 degrees F. Line muffin tins with muffin liners.
Stir together first 4 ingredients. Pour oil into a 1 cup measuring cup; add the egg and enough milk to
fill the cup. Mix liquids into flour mixture. Fold in berries. Fill muffin cups 2/3 full with batter, then sprinkle
with crumb topping.
MUFFIN CRUMB TOPPING:
Mix together brown sugar, flour, butter, and cinnamon. Mix with fork until all is crumbly. Sprinkle over
top of muffin batter before baking.
Bake for 20 to 25 minutes.
