Meaty Vegetarian Pasta
This has a meaty texture with multiple colors that makes it healthy.
1 red pepper, chopped
1 green pepper, chopped
1 zucchini, sliced
1 bunch of fresh leaf spinach
1 jar Bertolli's tomato & basil spaghetti sauce
1 box rotini pasta
1 T. olive oil

Chop and slice red and green peper and zucchini (food processor works great for this). Remove stems from spinach. Set aside.
Prepare rotini per the instructions on the box. While rotini is being prepare, sautee vegetables in olive oil in a large skillet. Don't overdo it. The spinich will turn to a dark green when sauteed completely.
In a large pan, combine sauteed vegetables (don't drain) with spaghetti sauce and heat. Serve with rotini topped by pasta sauce.
