This is a very tasty lunch or appetizer. The chicken broth and half and half milk really add to the richness.
4 slices of bacon, cut into 1 inch pieces
4 green onions, chopped
1/4 c all-purpose flour
1 can Campbell's Chicken Broth
1 large baking potato, peeled and diced
1 head broccoli, chopped
1 c whole milk or half and half
Coarse ground salt and pepper (optional)
1) In large pot, cook bacon until crisp (8-10 minutes); transfer to paper plate (leave grease in pan)
2) Add potatoes to grease; cook until almost done (three-quarters). Add onions; cook until soft
3) Add flour; stir constatnly; add broth
4) Add broccoli and milk; cook until broccoli is crisp (8-10 minutes)
5) Season with salt and pepper to taste
