Levi's Food and Nutrition class at Oakland Junior High prepared this in their classroom. It's a quick and simple recipe (with or without meat).
1 T butter or margarine
1 c. diced red pepper
1 c. chopped green onions
3/4 c. cubbed ham or crumbled fried bacon (optional)
1/2 c. shredded cheddar cheese
4 large eggs, beaten
Microwave the butter in a pie plate for about 45 seconds until melted. Spread the onion, red peppers and meat, if desired, in the dish and microwave on high for 2 minutes.
Stir in the beaten eggs and salt and pepper (to taste) and cook on high for about 2 minutes, until a toothpick inserted in the center comes out clean.
Sprinkle evenly with cheese. Microwave for 20 seconds until the cheese begins to melt.
May be cut into four wedges (or a hungry kid can eat the whole thing).
