Tropical Zucchini Bread

This is a tasty twist to the usual zucchini bread recipes. Special thanks to Chris' wife Lisa for preparing this dish (Chris did the food processor on the zucchini).

3 eggs
2 c. sugar
2 tsp. vanilla
1 tsp. salt
1 c. crushed pineapple, drained
1 tsp. baking soda
1 tsp. baking powder
3 c. flour
1 c. oil
1 tsp. cinnamon
2 c. grated zucchini
1 c. coconut (optional)
1 c. chopped nuts (optional)

Combine eggs, sugar, vanill and oil. Beat well. Add zucchini. Then add dry ingredients and fold into egg mixture. Blend in pineapple, coconut and nuts. Bake at 350 degrees for 1 hour. Makes 2 loaves.
