This is a great recipe to prepare with the help of the kids!
Preheat oven to 375
In a medium bowl: whisk 1c. flour; ½ c. brown sugar; ½ c. old fashioned rolled oats; and a pinch of salt. Add 8 Tbs of butter, cut into pieces at room temperature until butter is blended in. (The mixture should clump when you pinch it) Refrigerate.
In another bowl, combine: 4 apples, peeled, cored and sliced; ¼ c. firmly packed brown sugar; ¾ tsp ground cinnamon. Toss until apples are evenly coated.
Spread mixture into 9x9 baking dish, scraping any juices from the bowl.
Using your fingers, break apart the chilled topping into small clumps and scatter over vegetables.
Bake until topping is golden and apples are tender, about 40-45 minutes. Let cool at least 15 minutes.
