Family Tuna Melt
After Wednesday's coversation about feeding men and boys with author Lucinda Scala Quinn, I borrowed the idea for this high protein lunch. Lucinda's book is called Mad Hungry: Feeding Men and Boys.

Crust:
2 c. Bisquick baking mix
1/3 c. mayonnaise or salad dressing
1/3 c. milk

Tuna Melt:
3 (5 oz.) cans tuna, drained
1/2 c. finely chopped celery
1/3 c. mayonnaise or salad dressing
2 T. sweet relish
6 slices American cheese

Heat oven to 450 degrees. Mix baking mix, 1/3 cup mayonnaise and the milk until soft dough forms; beat vigorously 30 seconds. Turn baking mix onto floured surface. Knead 10 times. Pat into rectangle, 12x8 greased cookie sheet. Bake until light brown, about 8 minutes.
Mix remaining incredients except cheese. Spread over hot, baked crust. Top with cheese slices. Bake until filling is hot and cheese is melted, about 5 minutes.
