Kellogg's Fruitcake
This is one fruitcake that you will actually enjoy. Amaretto instead of rum makes it accentuate the fruit flavor.

 

Ingredients:
2 c. packed brown sugar
3 c. all purpose flour
1 T baking soda
2 T ground cinnamon
1 T ground allspice
2 T ground nutmet
4 eggs
2 T RealLemon juice
2 T vanilla extract
1/2 c. Amaretto (or brandy)
3 c. dried mixed fruit*
1 1/2 c. chopped nuts
1 1/2 c. butter, melted
1 3/4 c. Amaretto (or brandy)

Preheat oven to 225 degrees. Grease and flour a tube pan.
In a large bowl, combine sugar, flour, soda, spices, eggs, lemon, vanilla and 1/2 cup Amaretto. Mix thoroughly. Then mix in furit, nuts and melted butter. Pour into prepared pan.
Bake for an hour or so, until tester comes out clean. Cool on a wire rack.
Wrap cooled cake in foil. Sprinkle 2 tablespoons of Amaretto over the cake everyday for 2 weeks.

* I used Sunsweet dried fruit blend of blueberries (10 oz.), cherries, cranberries and a 7 oz. package of SunMaid fruit bits (raisins, apricots, apples, peaches, plus and cherries)
